Olive oil is derived from the fruit of the olive tree (Olea europaea), an evergreen tree or shrub belonging to the Oleaceae family. The fruit of the olive tree is a drupe, oval or round in shape, and comes in various colors ranging from green to dark purple or black. Mature olives contain olive oil. All parts of the drupe—the peel, flesh, pit, and seed—contain olive oil. Olive oil is obtained through processing and extraction of the olive fruit.
